Hello Old Friends

I can't believe how long it has been since I have last posted.  I had planned to take a break while I learned how to balance my new schedule and work responsibilities.  I did not plan to be gone for 2 months.  But between working 10-12 hours a day, 7 days a week for at least a month, taking care of the home, getting strep throat, having a car die and buying a new one life has been, well, busy.

But I am back now and hoping to catch up with everyone.  I won't be able to post everyday but I am hoping to get 2-3 posts up a week while I continue to balance, work, home, friends and family.

Constant Changes

If you have been following along with me for any period of time you know that I constantly like to change my background.  I like to go with the seasons and sometimes I get bored looking at the same thing every day.  I should probably choose a design and stick with it like most brands do, but I just can't.  So I have changed to a Fall background.  The jury is still out if this is the one I am going to stay with for the season.

One Year

Today is the one year birthday of Presidential Living!  To celebrate I made a lemon cream pie to help me accomplish one of my Summer goals to become an excellent pie maker.  I used this recipe minus the topping.  There weren't many ingredients, it seemed simple enough and I wanted to use lemons so I would have peels for a candied lemon peel recipe I want to try out.

The key to pie dough is having everything cold.  I cut the butter into pieces and put them in the freezer, I chilled the flour, and made sure to use freezing ice water.  I am not sure if enough water was added, I used the maximum amount but it still seemed a bit too crumbly.  I didn't flour the pastry mat well enough so I ended up overworking the dough when trying to roll it out.  The crust turned out ok but not great.  The filling was tart but wonderful.

Presidential Living

I am sure you are asking Presidential Living, eh, what makes you think you are presidential? First would be the most obvious being that we share the surname Kennedy. Next would be that the famous Kennedy compound is in Cape Cod, while we live in a cute little Cape Cod. Then is the fact that the Kennedys' were charasmatic and glamourous, naturally we are also. Lastly the Kennedy men were charming and handsome, and although biased I would agree so is my Mr. Kennedy.

All teasing aside this is us attempting to live our best life, healthy, active and large, actually presidentially.
