Swiss Chard Stems

What do you do with your Swiss Chard stems?  I love the leaves and sometimes I cook with the stems also.  But I find them hard to incorporate since they require to be cooked differently than the leaves.  I often toss them even though I hate to do so.

Can Anyone Tell Me

What those pink spots on the chard are due to?  They have also shown up on some of my lettuces especially the arugula.  I don't know if I should ignore it and eat them anyways or if it is a sign to throw these into the compost.  It's like my greens have the chicken pox.
