The fourth of July is an exciting holiday in our household. The Kennedy family always has some sort of party, local fireworks and annual races Andy runs. Today we are off to celebrate with the family and I am taking a couple of different side dishes. I made this potato salad and garnished it with some borage leaves from the garden. I think it is one of my new favorites, it is not loaded down with heavy mayo and tastes extremely light and fresh. I will have to make room for potatoes in the garden next year so I can make this more often!
