Pesto!

There is nothing like fresh pesto.  I grow basil specifically just to make pesto.  Yesterday it was time for a massive pruning of the basil and I made the first big batch.  I ended up with almost 5 cups that got frozen in plastic baggies in 1/4 cup amounts.


I don't have an exact recipe I just eyeball it because I have been making it for so long.  But I can give you my ingredient list of basil, parmesan, pine nuts, garlic, extra virgin olive oil and freshly squeezed lemon juice.

  1. Looks good Vanessa, I made some and put it into ice cube trays, when it froze I put it into one baggie to take at my will..

  2. I have heard about using the ice cube tray trick but you would have to have ice cube trays to do that. Since we have an automatic ice maker I just haven't ever spent the cash on the trays just for pesto.

  3. You can find them at goodwill for next to nothing..they come in handy for other things too, like fresh squeezed lemon juice or orange juice. (bargains that you sometimes get).
