Day Off

Yesterday I had a day off work and I choose to get a head start on my cooking for the week.  I made:

French Onion Soup,
Roasted Chicken,
Beef Barley Soup,

Homemade Chicken Stock (for the first time),

And Manicotti that was for yesterday's dinner but I didn't get to take a picture before we ate it.

  2. That looks great. I bet you're gonna hate buying store stock now. Too salty. Yuck!

  3. Allison - I liked making the stock. It made me feel like I wasn't wasting the left over pieces of the chicken. I also didn't worry about putting in an exact amount of anything I just threw in aromatics I had on hand. I just put a lid on the pot and let it simmer away for a couple of hours while I did something else. Easy!
